I am trying to slowly get back in the habit of really cooking again. Yesterday I whipped up this pumpkin-kale lasagna, and it is pretty darn good. I used canned pumpkin and some sharp cheese instead of the provolone. Kale and pumpkin both have distinctive flavors, so I like the stronger cheese.

OK... it's been my normal MO to beg for food when there's a food post, but ummm... I think I'm good with this combo ;-) As long as you enjoy it though it's all good.
Hm, yes, I'm going to have to agree with Ron. I'm good with kale, and I like pumpkin, but sharp cheese? No thanks - none for me please.
I swear it was delicious! It just tasted like lasagna!!
