Flourless cookies

Lots of sugar, butter, peanut butter, oats, chocolate chips, raisins. Is your mouth watering yet? Just because they are flourless, does not mean they are good for you. They are good though! As with a lot of the yummy things I make, this came from my sister. The recipe is in the comments.

WYOMING WHOPPER COOKIES

2/3 cup butter
1 ½ cups chunky peanut butter
1 ¼ cups packed brown sugar
¾ cup sugar
3 eggs, beaten
6 cups old-fashioned oats (not quick-cooking)
2 cups (12 ounces) semisweet chocolate chips
1 ½ cups raisins (I usually use about 1 cup)
2 teaspoons baking soda

In a large saucepan, melt butter over low heat. Remove from heat, and blend in peanut butter, sugars and eggs, mixing until smooth. Measure oats, chocolate chips, raising and baking soda into a large bowl. Pour peanut butter mixture over, and combine (dough will be sticky). Drop on greased baking sheets with an ice cream scoop or large spoon, and flatten slightly. Bake at 350˚ for about 15 minutes. Remove to wire racks to cool. Makes 2+ dozen large cookies. Editor’s suggestion: Recipe was prepared using Jiff brand peanut butter. If another brand is used, add several tablespoons water to mixture.
