Subject: Yummy easy summer recipe

My sister was right in her email. This was yummy and easy and a perfect combination of fresh produce! Nothing like garden tomatoes, corn, garlic and basil mixed with tortellini! I think a splash of white wine would have been good or some parmesan. I did not go get fresh corn, but Trader Joe's frozen roasted corn is pretty close. The recipe is in the comments.

From the kitchen of Jenski's sister's friend

1 8-oz bag dried cheese tortellini (or frozen)

4 ears corn, kernels removed*

1 large garlic clove, finely chopped (or more if you like garlic)

½ cup butter

2 medium tomatoes, chopped

½ cup chopped basil

2 oz thinly sliced prosciutto ham cut into strips

Boil pasta, reserving ½ cup pasta water.

Cook corn, prosciutto, garlic, and pepper-to-taste in the “fats” over med-high for 4-5 minutes. If you like your prosciutto crispier, cook it by itself for a few minutes before adding the other ingredients. Remove from heat and add chopped tomatoes.

Drain tortellini, and, in a large bowl, toss with reserved pasta water, corn mixture, chopped basil and salt/pepper to taste.

*The BEST way to take corn kernels off the ear—use a Bundt pan. The stem-end of the ear of corn fits perfectly into the hole in the middle, and the kernels fall right off into the pan (instead of all over your shelf and/or floor).
